Well, Out of any doubt, the Cerf Ardennais is the twin brother of the Florina. Just the cut is finer. The rest: soft & very pleasant, strong but not excessively so. Very nice application of the tonquin flavor. During the time in between, I've managed to learn that they are not the genuine Semois which is produced by few artisans in the Ardennes (Vincent Manil at Corbion, just to name on of the most renowned). Nevertheless both the Fiandria's products are something good deserving three stars.
